The Argentine bar tender Diego Cabrera owns this cocktail bar in the heart of Madrid, offering different and unexpected ambiance and innovative cocktail creations. It is also on the list of The world's 50 best bars 2023, ranking 16th.

After closing for an extensive refurbishment, it reopened in May 2023, offering a different décor and cocktail menu.

An old tile mural has been uncovered at the entrance of the tavern that occupied the premises before his arrival. The space has been enlarged, with the presence of a lower counter lined with zinc scales that simulate the scales of a salmon.

The design of the premises has been the responsibility of the Argentinian studio Eme Carranza, which has maintained its division into three parts: animal print at the entrance, comics in the middle area and Asian in the background, with the presence of drawings, neon lights, manga aesthetics, bottles with snakes or a horizontal garden in an almost floating bar.

To accompany their cocktails, Salmon Guru also offers a menu featuring several sharing platters that are original and beautifully presented.
