Ina Garten has the perfect summer dessert that never fails to disappoint and is so easy to make — red berry shortcakes. The recipe can be a more traditional strawberry shortcake or can be customized with other fresh fruits. And her honey yogurt topping takes the sweet treat to the next level.  

Ina Garten’s red berry shortcakes are the ‘ultimate summer dessert’

Garten shared a picture of her delicious dessert on Instagram ahead of the Memorial Day holiday, explaining how the shortcakes are perfect for the summer.  

“Red berry shortcakes with honey yogurt are the ultimate summer dessert for my Memorial Day dinner!,” she wrote in the caption. “I took my flaky shortcakes and piled them high with strawberries, raspberries, and Greek yogurt sweetened with a drizzle of honey. So delicious!”

Garten’s tasty shortcakes come together easily. She combines flour, sugar, baking powder, salt, butter, heavy cream, eggs, and orange zest in a mixer, then turns the dough out onto a floured surface. After rolling the dough ¾ to 1 inch thick, she uses a circle cutter to stamp out the shortcakes.

She places the shortcake rounds on a parchment-lined baking sheet and chills them for 30 minutes in the refrigerator. Before baking, Garten brushes each round with egg wash and sprinkles sugar over the tops. The shortcakes bake for 18 to 20 minutes in a 425 degree Fahrenheit oven.

While the shortcakes are baking, Garten combines the sliced strawberries in a bowl with sugar and allows it to sit at room temperature for 30 minutes before folding in the raspberries. She whisks together yogurt and honey and refrigerates the mixture until she’s ready to serve the dessert.

Garten slices the shortcakes in half horizontally, placing the bottom section on a plate, then topping them with the honey yogurt and a spoonful of berries before putting the tops on each. She sprinkles each with grated orange zest.

Ina Garten has an elegant deconstructed strawberry shortcake recipe

On her Food Network show, Garten demonstrated how to make a different twist on the classic dessert — deconstructed strawberry shortcakes. “Strawberries, shortcake, and whipped cream — I mean, what’s not to love?,” she said.

Garten had a little fun with the presentation, which involves placing the berries and whipped cream in a martini glass with the shortcakes served at the base of the glass. “It’s always fun to do something in a very different way,” she explained.

She hulled and sliced the strawberries and placed them in a bowl with sugar and Grand Marnier liqueur, tossing to combine the ingredients. “It sweetens the strawberries and the orange really is good with it,” Garten noted. “It’s going to be fantastic.”

Garten also recommended mixing the berries, sugar, and orange liqueur a half-hour in advance to really enhance the flavors.

The Barefoot Contessa star made a quick and easy whipped cream and assembled the elegant dessert. “Doesn’t a martini glass make everything special?,” Garten said.
